The discussion on #4908 with @saikrishna1-bidgely made it clear to me that having more documentation about ListingTable and what it can do would help people;

Add a doc example for creating ListingTables
Add some hints in the docs for SessionContext::read_parquet, etc pointing there
Benchmark runs are scheduled for baseline = e566bfc and contender = 65555d7. 65555d7 is a master commit associated with this PR. Results will be available as each benchmark for each run completes.
